1 6 oz box Stovetop dressing----Turkey flavor
1 6 x 8 cooked, yellow cornbread---cooled
1 tablespoon poultry seasoning
1/4 teaspoon pepper
1 teaspoon salt---may substitute onion salt
1 tablespoon sage
2 hard-boiled eggs chopped very fine
2 cans chicken broth
2 eggs slightly beaten
2/3 cup melted butter or margarine
2 large onions finely chopped
2 cups finely chopped celery including celery tops
1 cup water---if mixture is too dry
Prepare the Stovetop dressing as per the directions on the box and set aside. Crumble up the cooled cornbread in a large mixing bowl. Add the poultry seasoning, pepper, salt, and sage and the hard boiled eggs. Mix well.
In another bowl, mix the chicken broth with the two slightly beaten eggs and the melted butter. Add onions and celery. Slowly add this to the cornbread mixture. Add the Stovetop dressing. Mix well. If too thick, add enough hot water to thin.
Bake in a 350 degrees oven till top starts to turn brown. Take out and let cool. Empty the dressing into the large mixing bowl, recrumble, and pour back into the baking dish that you have now sprayed with PAM.
Bake another thirty minutes at 300 degrees. This makes the dressing crusty, but not too dry---if too dry, sprinkle with water and put back into oven for about five minutes.
